Epicurious: The World's Greatest Recipe Collection- The site includes over 15,000 recipes compiled from Gourmet and Bon Appétit magazines from the 1990s to the present. The site also includes a variety of reference information, including a 4,000-word food dictionary, a 3,500-word wine dictionary, and a Metric Conversion chart. Access to chef profiles, travel information, restaurant reviews, and discussion and news groups is also provided.

Food Timeline - This site, created by Lynne Oliver, a reference librarian from New Jersey, details food and culinary history. Food Safety Streaming Videos - From the Public Health Website of Seattle and King's County, these streaming videos cover a variety of food safety topics. Although some include Washington state-specific material, most are general and applicable nationwide. Real Player is required to view streaming video and high-speed Internet connection is recommended.

International Bibliographic Information on Dietary Supplements (IBIDS) Database - The goal of this site is to provide citations to "credible, scientific literature on dietary supplements," covering both human and animal subjects and including herbal and botanical supplements. The site is a collaboration between two US government agencies: the Office of Dietary Supplements of the National Institutes of Health, and the Food and Nutrition Information Center (FNIC) of the United States Department of Agriculture's (USDA) National Agricultural Library (NAL).

Great Food: Chefs - This PBS series features celebrated chefs from around the world. While there is not an extensive listing of chefs here, the information is reliable. Descriptions of the episodes are also included, as are a few free recipes and a metric conversion chart.

Meet the Chefs - This is a section of the Web site for the PBS program: Julia Child: Lessons with Master Chefs. There are quite a few chefs profiled here. Although many of the profiles are fairly brief, the information is reliable. Most chef profiles also include "Prime Video Cuts" of the chef at work.

Burt Wolf's What We Eat - This site provides links to information from different segments of the 13-part PBS series, What We Eat, which "looks at how Christopher Columbus and the Spanish Conquistadors changed what people ate, and how that fundamental shift changed almost everything on our planet." Topics include specific foods as well as specific regions of the world including Africa and the Mediterranean.

Key Ingredients: America by Food - This site is "the online educational companion to the Smithsonian Institution's traveling exhibition, Key Ingredients: America by Food, and it explores the two ingredients that are key to American cuisine – regional traditions and international influences." A section of the site entitled, 500 Years of Food focuses on the history of food in North America with an emphasis on different regions of the country. (This sectionof the site requires the Flash 6 player.) This overall site is a great resource for regional food & cooking information, international influences on North American cooking, and the history of food in North America.

International & Ethnic Cuisine

The Bankier Library has a number of great print resources addressing international and ethnic cuisine. Try a keyword search for the name of the country, or browse the bookshelves at the Culinary Education Center. There is also a series of e-cookbooks which you can access anywhere you have an Internet connection. Use the library catalog to search for "Easy Menu Ethnic Cookbooks" by title for a complete list.

The Epicenter - This site provides access to recipes and destination information about Asia, Australia, India, Mexico and the Mediterranean. The site's homepage provides links to a variety of reference information as well.

Global Gourmet - The Destinations section of this site provides links to over 30 countries. Each profile includes background information and common foods. Most profiles also include links to recipes associated with that country's or region's cuisine. The entire site can be searched for additional information about a country as well.

Tastings - This is the site of the Beverage Tasting Institute, an organization founded in 1981 with the objective of producing fair and impartial wine reviews for consumers. The site provides some information about beer and spirits, but primarily focuses on wine. Users can access a food and wine matching guide, wine reviews, a wine dictionary and more. The site provides the ability to search for wine, beer and spirits as well.
