Restaurant Association - The National Restaurant Association
is the leading business association for the restaurant industry.
This site provides access to industry news, industry research, food
safety & nutrition information and more! New
Jersey Restaurant Association - The NJRA
is a non-profit trade organization established in 1942 to protect
the interests of the food, beverage, and hospitality industries
in New Jersey. This site provides document downloads, links, and
news related to the industry. Searchable dining and buyer's guides
are also available. The
Restaurant Report - This site provides
access to information and issues relevant to the mid-to-upscale
independent restaurant market. Access
to the weekly email newsletter is available for free, as is access
to the online newsletter archive. US
Census Bureau: Monthly Retail Trade and Food Services - This
site provides access to food service statistics. Information about
the survey, including an overview of the program and the sample
design, is also included. Food

FoodSafety.gov - This gateway to government food safety information
is searchable
and provides links to News
& Food Safety Alerts. International
Food Information Council - This searchable
site of the IFIC Foundation provides food safety and nutrition information.
The Students
section section of the site provides access to a variety of
educational publications, which can be downloaded and printed for
free. Nutrition NATS:
Nutritional Analysis Tools & System - This site, originally
developed by professors in the Department of Food Science and Human
Nutrition at the University of Illinois, allows users to enter food
types and quantities and then provides a nutritional analysis. (See
also the
USDA Nutrient Database). Nutrition.gov
- This site provides access to a variety of government-sponsored
resources and information on nutrition, food safety, and figures
for American food consumption. The site also provides links to related
government websites on fitness and disease prevention. Nutrition
Source - This site, sponsored by the Harvard School of Public
Health, provides timely information diet and nutrition for clinicians,
allied health professionals, and the public. The site covers a variety
of topics related to nutrition and provides an informative link
on Interpreting
News on Diet. USDA
Food & Nutrition Service - This government site provides
information on national hunger prevention programs. USDA
Nutrient Database - This government-sponsored site allows for
simple keyword searches and provides basic nutritional values of
a variety of foods. (See also

Recipes Cooking.com
- The Recipes section of this site provides access to
recipes and cooking tips. The site allows users to do basic or advanced
searches for recipes. Recipes are also browsable by course, cuisine,
ingredient and more. Epicurious:
The World's Greatest Recipe Collection-
The site includes over 15,000 recipes compiled from Gourmet and
Bon Appétit magazines from the 1990s to the present. The
site also includes a variety of reference information, including
a 4,000-word food
dictionary, a 3,500-word wine
dictionary, an
etiquette guide for dining and a Metric
Conversion chart. Access to chef profiles, travel information,
restaurant reviews, and discussion and news groups is also provided.
Meals
for You - This site offers free access to over 8,000 recipes.
Users can use basic or advanced searching for recipes, as well as
a variety of browsing options. This site also provides cooking tips,
meal plans, health guides and more. Recipe
Source - Formerly called SOAR, this site provides access to
approximately 70,000 recipes! The recipes are organized by
ethnic affiliation or type of dish. Recipes can be searched and
browsed. This is one of the best recipe sites available. Whole
Foods Market: Recipes - This site provides many recipes in a
variety of categories. Browsing is easy, but searching is also an
option. Many recipes contain nutritional information. Famous
Chefs & Hoteliers A&E's
Biography Channel Website - This searchable site contains brief
biographies on a number of well-known chefs, and often provides
links to their websites. BBC
Food: Chef Biographies - This site provides brief chef biographies
for over 40 celebrity chefs, with related links to recipes and BBC
food programs. Epicurious
Chef Profiles - The Chef Profiles section of this site
provides brief profiles or interviews with about 20 famous chefs.
Related links (for recipes, cookbooks, etc.) are provided with each
feature. Food
Network: Celebrity Chefs- This section of the site provides
biographical information about chefs whose programs appear on the
Food Network. General reference information includes an encyclopedia
of food, a
fat/calorie counter, and an ingredient
substitution list. Great
Food: Chefs - This PBS series features celebrated chefs from
around the world. While there is not an extensive listing of chefs
here, the information is reliable. Descriptions of the episodes
are also included, as are a few free recipes and a metric conversion
chart. Meet
the Chefs - This is a section of the Web site for the PBS program:
Julia Child: Lessons with Master Chefs. There are quite a
few chefs profiled here. Although many of the profiles are fairly
brief, the information is reliable. Most chef profiles also include
"Prime Video Cuts" of the chef at work. Star
Chefs - The Chefs section of this site provides access
to profiles of many chefs, pastry chefs, cookbook authors and rising
stars. Links to chefs' recipes are often provided. Other sections
of this site include
jobs, culinary
schools, recipes,
wine
and more. Regional Cooking - USA Burt
Wolf's What We Eat - This site provides links to information
from different segments of the 13-part PBS series, What We Eat,
which "looks at how Christopher Columbus and the Spanish Conquistadors
changed what people ate, and how that fundamental shift changed
almost everything on our planet." Topics include specific foods
as well as specific regions of the world including Africa and the
Mediterranean. The
Great American Potluck - This site, part of the Library of Congress'
American Memory series, contains recipes and information
that "illustrate the American immigration experience."
Many of these recipes originate in countries other than North America,
but North American favorites are also included. Recipes can be viewed
by Title, Category or Region. Each recipe includes a brief story
as well. Key
Ingredients: America by Food - This site is "the online
educational companion to the Smithsonian Institution's traveling
exhibition, Key Ingredients: America by Food, and it explores
the two ingredients that are key to American cuisine – regional
traditions and international influences." A section of the
site entitled, 500
Years of Food focuses on the history of food in North America
with an emphasis on different regions of the country. (This section
of the site requires the Flash 6 player.) This overall site is a
great resource for regional food & cooking information, international
influences on North American cooking, and the history of food in
North America. The
World Wide Gourmet: USA - The USA section of this site
provides access to recipes and information pertaining to regional
areas, from coast to coast, of the United States. Holiday traditions
in the United States are also explored. International
& Ethnic Cuisine The
Epicenter - This site provides access to recipes and destination
information about Asia, Australia, India, Mexico and the Mediterranean.
The site's homepage provides links to a variety of reference information
as well. Global
Gourmet - The Destinations section of this site provides
links to over 30 countries. Each profile includes background information
and common foods. Most profiles also include links to recipes associated
with that country's or region's cuisine. The entire site can be
searched for additional information about a country as well. Going
Global - Going Global is a section of the Epicurious
site and provides brief articles about various international and
ethnic cuisine. Most of the countries or regions featured also provide
links to chefs who prepare these types of food and related recipes.
Some of the links, such as country glossaries and cookbooks, seem
to be dead for all countries featured, but the available information
appears sound. Jewish
Cooking in America with Joan Nathan - This is a site affiliated
with a PBS program of the same name. It provides access to recipes,
historical
facts, and program information. La
Cucina Italiana Online - This site focuses on Italian cooking.
It provides access to a searchable recipe database, a glossary of
Italian cooking terms and information and recipes from Italy's major
regions. Recipe

Wide Gourmet: Countries - The Countries section of this
site provides links to culinary country profiles, including recipes,
for 45 countries and their regions . A link to additional
recipes by country is also included. The site also includes
reference links to a glossary
and conversion
chart. Wine & Spirits Society
of Wine Educators - The site of this non-profit educational
group provides access to the SWE newsletter, information about educational
opportunities and information about the SWE Annual Conference. Tastings
- This is the site of the Beverage Tasting Institute, an organization
founded in 1981 with the objective of producing fair and impartial
wine reviews for consumers. The site provides some information about
beer and spirits, but primarily focuses on wine. Users can access
a food and wine matching guide, wine reviews, a wine dictionary
and more. The site provides the ability to search for wine, beer
and spirits as well. Wines
of France - This commercial site, designed to increase awareness
of French food and wine, provides access to a wealth of information,
including information about wine
growing regions and grape varieties, understanding
wine labels, and pairing
food and wine (including a section on pairing wine with international
cuisine.) A wine
glossary and other reference information is also available. Wine
& Spirits Magazine - This is a subscription-based site,
so not all of the information is freely available. However, the
"Recommendations" section of the site provides free access
to Wines of the Week, The Year's Best, and Wine
Values. (Each of these sections include archived selections
as well.) Restaurant & Hospitality Law For additional legal information, visit Lexis-Nexis Academic, a subscription database providing legal resources, available through Bankier Library Findlaw
- This site provides information for three audiences: the public,
small businesses, and legal professionals. Legal news, legal decisions
and articles ranging across a broad spectrum of topics are compiled
at this site. The site is hosted by Thomson, a reputable publisher
of legal information. Internal
Revenue Service - The IRS site provides a wealth of tax-related
information. New
Jersey State Legislature - This searchable site provides access
to the full-text of the New Jersey Statutes, constitution, chapter
laws, and bills.
